I’ve been following the new Weight Watchers SmartPoints program this year (yeah… time to drop some poundage!!), and I have a handful of old WW cookbooks that I’ve been sourcing for good stuff to eat.  This recipe comes from The New Weight Watchers Complete Cookbook.  It’s not a cookbook that shares the points for the brand new program, but if you have a membership to WW online… you can input the ingredients to figure out the points for a recipe.

The box variety of pop tarts have long been my guilty pleasure.  For whatever reason, they call to me.  Scream to me.  So I have been wanting to make homemade pop tarts for a while because if boxed pop tarts can be that addicting, I could only imagine how much more intoxicatingly delicious homemade pop tarts would be.  And then I made these Nutella Pop Tarts.  Mind. blown.  Buttery, flaky pastry glazed with cinnamon, vanilla icing, giving way to creamy, Nutella  – AKA pastry paradise.

Easy Lentil Soup

Of the zillion soup recipes I’ve been trying this winter, this easy lentil soup recipe is my favorite.  I’m pretty sure I’ve said that about every soup recipe I’ve made, but I seriously love this one. The lentils are healthy and filling.  It’s the perfect soup to make on a Sunday afternoon, and store in the refrigerator for the week to scoop out a cup for lunch each day.

Very Vegetable Frittata

The most horrible thing about eating healthy is trying to figure out something enjoyable to have for breakfast each day.  Cereal is out of the question- too many useless carbs to start the day in a bad way.  I’ll occasionally eat oatmeal, but since I don’t like it without a boatload of sugar… it’s not such a great choice either.  Eggs are the obvious, favorite choice… but I have to get creative with the way that I make them.
