Orange Sherbet Jello Salad

It’s time to bring jello salads back in style:  Orange Sherbet Jello Salad

Orange Sherbet Jello Salad

My mom used to make this jello salad all the time when I was little.  It showed up on every single Thanksgiving table, it showed up at potlucks, and it made an appearance as a special treat for us kids once in a while too.  Jello salads have gotten a bad rap over the years because people try to put too much stuff in them.  This one is simply made with orange jello and mandarin oranges.  And it has orange sherbet in it too, so that makes it the best jello salad ever!!!

No Bake Pumpkin Shortbread Bars

Since the oven isn’t all that welcome in the summer, this dessert is the best plan:  No Bake Pumpkin Shortbread Bars

No Bake Pumpkin Shortbread Bars

I’ve raved before about pumpkin, but I’m going to do it again here.  You can use pumpkin all year long in both desserts and savory recipes too.  It’s not just all about the pumpkin pie, you know?  I have a good stash of LIBBY’S Pumpkin in my pantry at all times.  My family loves my famous Pumpkin Bread recipe, and I’m kind of partial to my Pumpkin Chili and Pumpkin Cornbread!  Today I’m showing you how to make a dessert that won’t let you stop at just one piece (or if you do then you’ll go to bed dreaming about it and will immediately want a piece in the morning for breakfast!) These No Bake Pumpkin Shortbread Bars are a must-try dessert for the hot days of summer.

Rosemary Lemon Chicken Skewers

Here’s a delicious recipe to try on the grill this summer:  Rosemary Lemon Chicken Skewers

Rosemary Lemon Chicken Skewers

Since my family loves chicken so much, we tend to grill it all summer long.  That means I have to come up with some different ways to serve it, or we’ll all be bored to death of chicken come September!  It helps to have some different marinade recipes on hand.  I hate buying the already prepared marinades in the store since it’s so easy and so much more delicious to make your own! I love this recipe for Rosemary Lemon Chicken Skewers because it’s so very simple, yet it packs a flavorful punch.

Cowboy Cookies

I’m crazy about these cookies, so you might be too! >> Cowboy Cookies!

Cowboy Cookies

Sometimes the simplest of cookie recipes are the most delicious cookie recipes!  In most of the world I think these are known as Oatmeal Scotchies (or something like it), but since I am kind of obsessed with everything cowboys… I’ve named them Cowboy Cookies.  I’ve been making these cookies for years, and I love them with butterscotch chips… but there are some chocolate chip purists out there who may shun the butterscotch chip idea.  Just give them some chocolate instead!
