Baked Pumpkin- Parmesan Chicken

Here’s a good idea for using up your pumpkin puree all year long:  Baked Pumpkin Parmesan Chicken

Baked Pumpkin Parmesan Chicken

This easy dinner recipe is something your whole family will enjoy.  I improved the nutrition on classic baked Parmesan Chicken by substituting a large component of the fat with LIBBY’S® 100% Pure Pumpkin.  A lot of people don’t realize that pumpkin can be used as a substitution for butter, oil and eggs- which cuts fat, calories and cholesterol from your favorite recipes.  Pumpkin is considered a superfood!  It’s a good source of fiber and an excellent source of vitamin A and the antioxidant beta-carotine.  I’ve partnered with LIBBY’S Pumpkin to share with you how to use pumpkin in recipes all year long!

Greek Turkey Burgers

Here’s a delicious Greek-Style Turkey Burgers recipe- complete with hummus, lettuce and tomato stuffed into pita bread.

Greek Turkey Burgers

I must say… I really do love this recipe a lot.  It’s a different sort of recipe than your classic burger recipe- since the burger is styled into a pita pocket with those awesome adornments shown in the photo.  And who doesn’t love a jazzed-up burger, right?  I was a little worried that my very-opinionated-and-not-afraid-to-speak-up 14-year old would really dislike this dinner.  I was totally wrong.  He loved it.  He may have picked off the tomatoes and shoved them aside, but he commented that the addition of hummus was an awesome idea.  My husband loved it too.  So this recipe is 98% positively approved by the RecipeGirl family (because of that tomato thing)!  Just for the record, my husband and I loved the recipe as written- tomatoes and all!!

Lemon Blueberry Pound Cake Recipe

Here’s the latest I’ve shared on Parade Magazine‘s blog:  I may have eaten far too much of this LEMON BLUEBERRY POUND CAKE.  It’s a great recipe- it makes three loaves, so you can freeze a couple to eat later… or you can be nice to your neighbors… or you can bring a loaf to a party as a hostess gift!

Dairy Free Chocolate Cupcakes

I’m so happy to include a recipe for the most delicious cupcakes ever for anyone who might have a dairy allergy:  Dairy Free Chocolate Cupcakes

Dairy Free Chocolate Cupcakes

These cupcakes are for my baby boy Brooks’ FOURTEENTH birthday (today!)  It’s hard to believe.  If you have kids of your own then you totally can relate.  You blink twice… maybe three times, and they’re almost ready to get their driver’s license!  We celebrated his birthday last weekend with some of his buddies hanging out at our house for the night.  I made him a lacrosse themed birthday cake that I shared on Instagram!  My kid is completely and totally absorbed in the sport of lacrosse.  He loves it, and he is pretty darn good at it too!

Old Fashioned Macaroni Salad

Everyone needs this recipe on hand to make for barbecues and potlucks:  Old Fashioned Macaroni Salad

Old Fashioned Macaroni Salad

For as long as I can remember, my mother has been making a similar version of this simple, classic macaroni salad recipe.  It has always been my favorite.  I don’t want anything fancy in my mac salad, so the simplest version works best for me.  You must begin with the small noodles with the hole in the middle (otherwise known as ditalini).  I suppose you could use small elbows too, but I personally love the little guys.  I toss my macaroni salad with a mixture of mayo, mustard and onion powder.  I mix in a small dose of chopped celery and green onions.  Chopped hard-boiled egg is folded in at the end.

Grilled Teriyaki Flank Steak

This recipe for Grilled Teriyaki Flank Steak has a nice marinade that turns out a very tender meat.

Teriyaki Flank Steak
Is it grilling weather yet where you live?  For us… today = no.  Last week = yes.  Next week = no.  The weather has been a little iffy around here in the Reno/Tahoe area.  We’ve had some beautiful, summery days, we’ve had a little bit of rain, and we’ve had springtime snow too!  It can’t seem to make up its mind.  I’m really ready for warm weather though.  We’ve just had our back deck fixed up and repainted, I’m spiffing up the outdoor furniture, and I’m ready to have some outdoor barbecues!  This recipe for Teriyaki Flank Steak will be perfect for our warm days of grilling.

Teriyaki Flank Steak Recipe

The flavor on this marinade is delicious (better than a bottled marinade for sure), and it turns out a very tender meat.  Be sure to slice flank steak thinly– against the grain– for the best results.  Now get outside and do some grilling!

Yield: 6 servings

Prep Time: 10 minutes + marinating time

Cook Time: 10 minutes

Grilled Teriyaki Flank Steak

Ingredients:

  • 2 pounds flank steak
  • 1/2 cup vegetable or canola oil
  • 1/2 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons white vinegar
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon garlic powder
  • 1 green onion, finely chopped

Directions:

  1. Combine flank steak with all other ingredients in a large freezer zip bag. Marinate for at least 8 hours, or overnight.
  2. Heat grill and barbecue steak until desired doneness.
  3. Cut steak against the grain in thin slices.

  • If you are preparing this recipe as GLUTEN-FREE, just be sure to use a brand of soy sauce that is known to be GF.

Easy Baked Chicken Drumsticks

Here’s an Easy Baked Chicken Drumsticks recipe that everyone will love (even your kids):

Easy Baked Chicken Drumsticks

I’m lucky enough to have my Mom living about 30 minutes away from me now.  I see her fairly often, and she comes and spends the night at my house occasionally.  On one such occasion, she made us dinner.  She whipped up these Easy Baked Chicken Drumsticks in nothing flat.  Simple crumbs with salt and pepper, a quick dunk in butter, a roll in the crumbs and into the oven they went.  They came out so crisp and buttery and perfect.

Oreo Brownies

This recipe for Oreo Brownies is my all-time favorite brownies recipe!

Oreo Brownies
This fudgy brownie recipe turns out a nice, sturdy brownie- perfect for swirling in chunks of candy or cookies.  I seriously have used this base brownie recipe (originally from Ina Garten) for all of my mix-in brownies.  They’re perfectly fudgy and sturdy.  The recipe makes a LOT of brownies, so you can easily make a pan of these and split it in half for two events!  AND you can steal a few extra for freezing into little zip baggies for your kid’s lunches.

Slow Cooker Cider Ham

This recipe turns out so tender and delicious:  Slow Cooker Ham

Slow Cooker Ham

I started this website in 2006.  So is it super strange that this is the very first ham recipe I’ve ever shared on RecipeGirl?  I couldn’t believe it myself… but I searched all over and didn’t spot any other ham recipes at all.  I’m sorry for that.  I love ham- I really do!  But I usually just get the no-fuss, already spiraled sort at the market and call it a day!  This ham recipe is absolutely the best choice ever to share for a first ham recipe.  It’s EASY.  It’s so incredibly tender.  And it’s delicious.  It’s perfect to make for a weeknight dinner, a special Sunday dinner, or a holiday occasion too.  Everyone is going to love how this one turns out.
